1(3 oz) box orange jello
1/2 cup sugar
1 cup pineapple juice (out of crushed pineapple...if not enough juice, add enough water to make a full cup of juice)

1 cup crushed pineapple (drained)
1 cup sour cream
1 can mandarin orange slices (drained)
1/2 cup coconut (optional...We don't use)

Directions:
Directions:
Heat the cup of juice to boiling...then, add jello and sugar and stir to dissolve. Set aside to cool.

After it has cooled, add the remaining items and mix well.

Pour into molds and refrigerate to mold.

***To double salad, use 1 cup water and 2 cups pineapple juice to solve sugar and 6 oz. jello.

"Grandma" made this quite often. After adding a dollp of topping, she would use a mandarin slice and a mint leaf for garnish on top!
