6 Cups finely whipped Potatoes
1 stick butter
1 cup cream
dash of salt
3 cup flour

Directions:

Into the potatoes, mix in butter, cream and salt. Gently work in flour until you have a dough that you can roll out thinly. Dust a rolling pin and cutting board with flour. Roll out portions of the batter to form lefse (roughly the size of a thick flour tortilla). Cook lefse on a very hot griddle (at least 400º) until golden brown. Flip and cook on the other side.

Lefse are a staple in Norwegian food. They can be garnished in many ways. I like them with just a little bit of butter. However, they are also good sprinkled with some sugar or cinnamon sugar. Goes great with a cup of coffee!
