3 tbsp. Oil
1 cup diced onion
½ cup diced celery
1 tsp. crushed garlic
¾ cup diced carrots
½ cup shredded cabbage, spinach or endive
1 cup cubed eggplant, zucchini or string beans
¾ cup cooked chickpeas
1 cup chopped fresh tomatoes
2 tsp. Salt
¼ tsp. black pepper
1 tsp. oregano
1 tsp. basil
¼ cup minced parsley flakes
2 cups tomato sauce
4 cups water or chicken broth
¼ cup wine (red or white)
½ cup macaroni

In an 8 quart pot, heat oil and sauté onion, celery and carrots for 10 minutes. Add all ingredients except macaroni. Bring to a boil, stir, and turn down heat to simmer for 30 minutes. Add macaroni, and cook another 30 minutes. Check water during cooking, add more if necessary.
