3-4 lbs chicken breasts
1 medium onion (diced)
1 bell pepper (diced)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel diced tomatoes
12 corn tortillas cut into 2 inch strips
8-10 oz cheddar cheese (grated)
8-10 oz Monterrey jack cheese (grated)

Directions:
Directions:
Boil chicken in a covered pot for 40 minutes or until chicken falls from bone. Let cool and tear into small pieces.

Mix together in a bowl the 2 soups and Rotel tomatoes.

In a buttered 13x9 casserole, layer half the chicken. Season with pepper. Then layer half of the onion and bell pepper. Half of the tortillas and half of the cheeses. Repeat layers and then pour soup mixture over the top, spreading evenly.

Bake at 350F for one hour.
