1 C chopped yellow onion
1 C chopped yellow bell pepper
3 garlic cloves, minced
2 Tbsp. oil
1.5 tsp. dried oregano
2 tsp. ground cumin
2 tsp. chili powder
2 15-oz cans black beans, rinsed and drained
2.5 cups cooked turkey or cooked ground turkey
16 oz. can pumpkin
14.5 oz. can diced tomatoes
3 C chicken broth

Sauté onion, bell pepper, and garlic in oil for 8 minutes or until soft. Stir in oregano, cumin, and chili powder. Cook 1 minute. Place in slow cooker. Add remaining ingredients. Cover and cook on low for 7 to 8 hours. I makes 1.5 times this recipe to fill my crock pot.
