2 frozen pie shells
1 C chopped ham
2 C grated Swiss cheese
5 large eggs
2 C half & half
1 T flour
1/2 tsp salt
Dash of cayenne
Grated Nutmeg

Directions:
Directions:
Split the ham and cheese between the 2 pie shells. Mix the rest of ingredients in a blender or by hand. Pour mix over cheese & ham in each pie shell. Bake at 375 degrees for about 40 minutes or until knife comes out clean & top turns golden brown.
** Can cook for only 30 minutes, cool & pop into the freezer. Reheat to finish cooking.

Every year for Mother's Day, we would all go to the Chablis Brunch at Trinity Episcopal Church in Redlands, CA (for those who don't know). Mijo would make this killer Quiche. Hope you like it as much as we all do.
