4 cups Pinto Beans (or red beans)
2 lb. diced smoked sausage
3 tsp. sugar
1 chopped onion
1 tsp. Cajun seasoning
salt & pepper to taste
1 tsp. garlic powder
2 cups rice (cooked separately)

Directions:
Directions:
Wash beans well and cover with 10 cups water. Soak overnight.

Drain and cover with 6 cups of fresh water. Add remaining ingredients except rice. Cook over low heat until beans are done (approximately 2 to 3 hours).

Serve over cooked rice.
