1 chicken, cut up
1 cup all purpose flour
1 tsp. salt
1/4 tsp. pepper
1 tsp. paprika
1 tsp. Cajun or Greek seasoning
1/2 cup milk
1 egg, beaten

Directions:
Directions:
Put oil (about 1 inch deep) in a heavy deep-sided skillet. Heat to a temperature of 350 degrees.

Combine the flour, cajun or greek seasoning, salt and pepper in a paper or heavy plastic bag.

Combine egg and milk in a deep bowl and mix well.

Drop chicken into bag (a few pieces at a time) into flour mixture. Remove & dip in milk mixture. Return to flour mixture. Shake to coat well.

Place chicken in skillet and fry 20 to 25 minutes or until golden brown, turning to brown both sides.

Remove from pan & drain on paper towels.
