3 T. minced garlic
1 small onion, chopped
3 T. olive oil
2 lb. ground beef
1 lb. sweet Italian sausage (bulk if possible)
1 1/2 t. oregano
3/4 t. thyme
3/4 t. salt
1/2 t. pepper
1 large can tomato paste
2 large cans diced tomatoes
1 small can diced tomatoes
no boil lasagna noodles
1 large and 1 small container fat-free cottage cheese
6 c. shredded mozzarella
10 slices smoked provolone cheese
grated Parmesan cheese
grated Romano cheese
grated or shredded asiago cheese

Directions:
Directions:
Saute garlic and onion in olive oil until transparent. Add ground beef and sausage and cook until brown. Add salt and pepper and tomato paste plus two cans of water. Then add 3 cans of diced tomatoes and the oregano and thyme. Simmer 45 minutes to an hour and correct seasoning at the end of cooking.

In a lasagna pan, layer the noodles, then the meat sauce, then the cottage cheese, the provolone, the mozzarella, and finally, the grated/shredded dry cheeses. It will usually make three layers, ending of course, with the dry cheese on top.

Bake at 350º for about 1 hour or until golden brow and cheeses are bubbly.
