3 lbs. chicken Parts (I use all breasts)
3 tbsp. butter
3 tbsp. olive oil
1/4 cup flour
1 tsp. salt
2 tbsp. brown sugar
1/2 tsp. ground ginger
1/8 tsp. pepper
1 1/2 cup orange juice
1/2 cup water
1 Orange - Zest it and Reserve zest for rice water
peel and section the orange

1 cup Long Grain White Rice
2 cups water (or for more flavor use 1 cup water 1 cup chicken stock)

Wash chicken and pat dry. Season with salt and Pepper and Emeril's Original Essence. Melt Butter and Oil in Large skillet and brown chicken, on both sides. Remove chicken from pan.
Combine Flour, brown sugar, Salt, Pepper and Ginger Whisk into pan drippings and whisk constantly until bubbly. Slowly Stir in OJ and Water and continue whisking until well combined. Reduce heat to medium low and allow sauce to bubble and simmer until slightly thick. Retrurn chicken to pan, cover with a lid and allow to simmer 30-45 minutes.
In the meantime, bring 2 cups water to boil, add zest from 1 orange and 1 cup long grain white rice and a pinch of salt. Stirr Rice, bring to a steady low boil, reduce heat and cover, steaming 20-25 minutes. Fluff with fork add one tablespoon butter.
After zesting Orange, remove peel and white membrane and cur orange into sections adding them to pan with chicken.
To serve, Place chicken piece over rice and 1 scoop of sauce.
