4 med. baked potatoes
2 slices (or more) of bacon
1 can chicken broth
1 1/2 c. milk
1 garlic clove, pressed
1/2 tsp. salt
1/4 tsp. pepper (or less!)
1 c. light sour cream
2 oz. (1/2 c.) shredded cheddar cheese

Remove skins from baked potatoes; coarsely mash.
Cook bacon over medium heat until crisp; remove to paper towel to drain. Crumble & set aside. Discard all but 1/2 tsp. of drippings in pan. Add chicken broth, milk, potatoes, celery, onions, garlic, salt and pepper to drippings in pan. Bring to a boil. Reduce heat and simmer 10 minutes. Stir in sour cream and reserved bacon; top with additional sour cream and cheese. The *original "Main Dishes" Pampered Chef recipe adds 1/2 c. celery and 1/2 c. green onions
