Citrus-Marinated Chicken Recipe

4-6 chicken breasts
1 T mild chili powder
1 T paprika
2 tsp ground cumin
juice and rind of 1 orange
juice of 3 limes
pinch of sugar
8-10 garlic cloves, finely chopped
1 bunch fresh cilantro, coarsely chopped
2-3 tsp extra-virgin olive oil
1/2 cup pineapple juice (optional)
salt and pepper
fresh cilantro sprigs, to garnish

TO SERVE:
lime wedges
tomato, bell pepper, and scallion salad

1. Place the chicken in a nonmetallic dish. To make the marinade, mix the remaining ingredients together in a bowl, seasoning with salt and pepper.
2. Pour the marinade over the chicken, turn to coat well, then leave to marinate for at an hour at room temperature. If possible leave for 24 hours in the refrigerator to marinate.
3. Remove the chicken from the marinade and pat dry with paper towels.
4. Place the chicken on a pan and place under a preheated broiler for 20-25 minutes, turning once, until the chicken is golden brown on the outside and cooked through. Brush with the marinade occasionally. To test if it is cooked, pierce a thick part with a skewer - the juices should run clear.
5. Garnish with cilantro and serve with lime wedges and a refreshing tomato, bell pepper, and scallion side salad.

I bake in the oven for 10-15 minutes at 400 degrees then put in a skillet to finish it off, keeping it on each side for about 5 minutes each.
