Directions: |
Directions:1. Place the chicken in a nonmetallic dish. To make the marinade, mix the remaining ingredients together in a bowl, seasoning with salt and pepper. 2. Pour the marinade over the chicken, turn to coat well, then leave to marinate for at an hour at room temperature. If possible leave for 24 hours in the refrigerator to marinate. 3. Remove the chicken from the marinade and pat dry with paper towels. 4. Place the chicken on a pan and place under a preheated broiler for 20-25 minutes, turning once, until the chicken is golden brown on the outside and cooked through. Brush with the marinade occasionally. To test if it is cooked, pierce a thick part with a skewer - the juices should run clear. 5. Garnish with cilantro and serve with lime wedges and a refreshing tomato, bell pepper, and scallion side salad. |
