1 ½ to 2 c. flour
2 c. whole wheat flour
2 pkg. yeast
¼ c. brown sugar, packed
2 t. salt
½ t. baking soda
½ c. water
1 ½ c. small curd cottage cheese (12 oz. container.)
2 T. oil
2 eggs

Directions:
Directions:
In large mixer bowl, combine ¾ c. all-purpose flour, ¾ c. whole wheat flour, yeast, brown sugar, salt, and soda. Mix well. Heat water, cottage cheese, and oil until very warm (120 – 130º). Add to flour mixture. Add beaten eggs; blend on low speed until moistened. Beat 3 minutes at medium speed. By hand gradually stir in both remaining flours, enough at least to make a firm dough. Knead on floured surface until smooth and elastic. Place in greased bowl; cover. Let rise in warm place 1 hour. Punch down dough. Pinch off pieces of dough; roll into balls. Place in greased pan. Bake at 375º for 12 to 15 minutes. Brush with butter. Remove from pans. Cool.
