6 large baking potatoes
1/2 stick unsalted butter, melted
1/2 cup milk
1/2 cup sour cream


optional ingredients

sautéed minced red bell pepper
sautéed minced red onion
chopped chives
cooked & crumbled bacon
shredded cheddar cheese
crumbled blue cheese

Directions:
Directions:
Bake the potatoes for 50 to 60 minutes. Let cool slightly, about 10 minutes. Cut potatoes in half, lengthwise. Scoop the flesh into a bowl, being careful not to tear the skins. Add butter, milk and sour cream. Mash, using a hand mixer, until smooth and creamy. At this point, you can be as creative as you wish. Add whatever you like from the suggested items above. (don't try to add them all..that would be over-kill.) Mix desired items into the potato mixture, and fill the potato skins. They can be frozen, at this point , for later use. Simply place on a tray or dish in a single layer, and freeze, uncovered. When frozen, they can be put into a freezer bag, and used when you wish.
To serve, allow to thaw. then top with more cheese, and/or paprika. Bake at 350º for about 15 or 20 minutes, until heated through.
