2 c. sugar
1 3/4 c. all purpose flour
3/4 c. Hershey's Special Dark Cocoa
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. buttermilk (or 1 c. milk + 1 T. vinegar)
1/2 c. vegetable oil
2 tsp. vanilla
1 c. boiling water

Directions:

1) Heat oven to 350º
2) Stir together all dry ingredients (sugar, flour, cocoa, baking powder, baking soda, salt) in a large bowl
3) Add eggs, buttermilk, oil, and vanilla - beat on medium speed for 2 minutes
4) Add boiling water slowly (batter will be thin) and stir until combined
5) Pour into prepared pans (9x13, cupcakes, 8x8 rounds, or 9x9 rounds)
6) Bake 28 to 32 minutes for rounded pans or until wooden pick inserted in the middle comes out clean (9x13 = 30-37 minutes and cupcakes = 16-18 minutes)
7) Cool completely

This cake is a winner every time. One of my assistants at school shared this recipe with me and I've used it for over 8 years. It's by far the best chocolate cake recipe I've ever found.
