1/2 c shortening
1 c sugar
1/2 tsp vanilla
2 beaten egg yolks
1/4 c shifted enriched flour
1 1/2 tsp baking powder
1/4 tsp salt
24 graham crackers crushed
3/4 c milk
3 stiff beaten egg whites

Pre-heat oven at 350
1. Cream shortening, egg yolks, vanilla and sugar until light and fluffy.
2. Add dry ingredient's to cream mixture alternating with graham crackers and milk. Beat each time until smooth.
3. Fold in egg whites
4. Bake in 2 paper lined 8x1 1/2 inch round pans or a 8 inch square pan until tooth pick comes out clean. If round pans are used make a lemon sauce and use as a filling and on top of layer cake.

This is my choice of a birthday cake since I was very small. Mom made the best as it is a warm memory for me. I still make it each year on my birthday and will share with anyone who wants a piece. I like it with butter or just plain.
