Ingredients: 1 - 9" ready made (Pillsbury is closet to home made) pie shell or homemade 2 medium sweet potatoes (can substitute fresh yams- not canned), cooked and peeled 1/2 cup butter (whole, not margarine), softened 1 - 14 oz can eagle brand condensed milk 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. salt (fresh ground sea salt or grey's salt) 2 eggs Can be doubled for two pies Optional: Line bottom of uncooked pie crust with carmelized pecans or walnuts or cream cheese.

Directions:Preheat oven to 350 degrees. In large mixing bowl, mash sweet potatoes or yams (whichever you choose) with the butter; add remaining ingredients except eggs. Beat until mixture is smooth and well blended, add eggs. Pour into pie shell bake 50-55 minutes or until knife inserted in center comes out clean. Serve warm or refrigerate. Top with fresh home made whipped cream. |
