1 - 9" ready made (Pillsbury is closet to home made) pie shell or homemade
2 medium sweet potatoes (can substitute fresh yams- not canned), cooked and peeled
1/2 cup butter (whole, not margarine), softened
1 - 14 oz can eagle brand condensed milk
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt (fresh ground sea salt or grey's salt)
2 eggs
Can be doubled for two pies
Optional: Line bottom of uncooked pie crust with carmelized pecans or walnuts or cream cheese.

Preheat oven to 350 degrees. In large mixing bowl, mash sweet potatoes or yams (whichever you choose) with the butter; add remaining ingredients except eggs. Beat until mixture is smooth and well blended, add eggs. Pour into pie shell bake 50-55 minutes or until knife inserted in center comes out clean. Serve warm or refrigerate. Top with fresh home made whipped cream.
