5 Large Tomatoes
2 tsp oil
1 tsp mustard seeds
1 jalapeneo or 2 small green chillie be mindful of heat here
1 tsp salt-or to your taste
i very small onion or 1/4 of a large onion
1/2 tsp shredded ginger
1/2 turmeric powder
1/2 cummin powder
1/2 tsp sugar
2 tsp coriander or a handful

Take a medium pan . Add oil. Add mustard seeds when oil is hot. Once mustard seeds start popping add cut up green chillies. Fry for few seconds. Add chopped onion.and shredded ginger. now add tomatoes. Cook till tomatoes get soft but not too mushy. once tomatoes start getting soft add turmeric and and Cummin powder.
cokk further for a minute mixing it nicely add sugar .

serving suggestion... Tastes great with everything
You can make this and keep it in the refrigerator for few days.

variations.. after mustard seeds you can add 1/2 teaspoon of Urad dal and curry leaves for a nice south indian taste.
If you like thickness in the chutney you can add lilltle bit of corn starch at the final stages.
Sometimes I like to add couple of cloves of chopped garlic after add my onion .
