White Sauce

½ c butter
2- 3 tbsp flour
Chicken broth 3 C.
Capers
Salt and Pepper
1 egg yolk beaten
Nutmeg

1 Whole chicken 3-4 lbs
Leak
Celery
Carrot
Onion
Green pepper
Salt and pepper

Rice

Directions:
Directions:
Make a chicken soup by cooking whole chicken with water,celery, leak, carrot, onion and green pepper. Salt and Pepper . Takes approximately 40 minutes.


In a large pot melt butter and add flour to make a rue…. Add salt and pepper to taste, add chicken broth enough to make a slightly thick sauce.. Add capers to taste. Add cooken chicken pieces.

Serve over Rice.
