4 cups milk
1/2 cup cornstarch
1 1/2 cup sugar
1/2 tsp salt
3 eggs, separated
1 1/2 tablespoons butter
1 tsp vanilla
1 1/2 cups coconut

Directions:
Directions:
Preheat oven to 350º. In a heavy 2-quart sauce pan, heat 3 cups of milk over medium-low heat. While the milk is heating, combine cornstarch, sugar and salt in a bowl, and gradually add the remaining cup of milk. Beat egg yolks and gradually add to the mixture. Mix well. When the other milk is hot, slowly add the egg yolk mixture to it, stirring constantly, until very thick.
Remove from heat and add butter, vanilla and coconut. Pour into your already-baked pie crusts, top with meringue, and sprinkle top with coconut. Bake until golden brown
