1 pkg. frozen chopped spinach or broccoli
1 large onion
1 pkg. mushrooms
1 cup grated cheese
3 tbsp. margarine
3 tbsp. flour
3 eggs
salt & pepper to taste

Directions:
Directions:
1) Microwave spinach (broccoli) for 9 minutes on high
2) Saute the onions and mushrooms in 1 tbsp. margarine
3) Add the spinach to the mushroom/onion mixture
4) Add the grated cheese, rest of the margarine (2 tbsp), flour and eggs
5) Salt & pepper to taste

Spray pie plate with non-stick spray, add mixture, bake for 1 hour at 325 uncovered.

Put it together the night before a brunch, cover and refrigerate it overnight then bake in the morning and it comes out just fine !!
