1 cup pitted prunes
2 cups flour
1 cup sugar
2 1/2 t baking powder
3/4 t. salt
2 eggs, beaten
3 T oil
1 T grated orange peel
3/4 cup chopped peanuts

Directions:
Directions:
Place prunes in saucepan; add water to 1/2 inch above fruit. Bring to boil. Reduce heat and simmer 5 minutes. Drain, reserving 3/4 cup liquid. Dice prunes. Combine flour, sugar, baking powder and salt; mix well. Combine reserved liquid, eggs, oil and orange peel. Add to dry ingredients; mix well. Stir in prunes and nuts. Pour into greased 9x5 inch loaf pan. Bake 350º 1 hour and 10 min. or until tests done. Let stand 10 minutes. Remove from pan to cool.
