1/4 cup fresh lemon juice,
1/2 tsp hot pepper flakes,
1/2 tsp cracked black pepper,
1/2 tsp coarse sea salt,
1 tsp lemon zest,
3 cloves minced garlic,
1/4 cup chopped fresh basil
1/4 cup chopped fresh cilantro, mint, dill or a combination of the 3. (use all 3 if you can)
1/2 cup extra virgin olive oil

Directions:
Directions:
Combine lemon juice, hot pepper flakes, cracked pepper and salt in a medium size bowl and mix until the salt dissolves. Add the lemon zest, garlic and fresh herbs. Stir in the olive oil. Pour over meat to be marinated in a zip-lock bag covering all sides. Force the air out of the bag, seal and refrigerate for 4-24 hours.
