Ingredients: 4 medium/large green tomatoes - hard to the touch - do not use ones that have softened. Equal parts (about 1.5 cups each) of: Flour Italian Bread Crumbs Grated Parmesan Cheese 3 large eggs beaten 1/cup milk Kosher Salt Fresh Ground Pepper 2cups of vegetable oil

Directions:Heat entire vegetable oil in a large nonstick skillet to 350º
Slice your tomatoes into 1/4 inch thick slices. Set aside.
Mix together flour, breadcrumbs, and Parmesan cheese. Add a couple pinches of Kosher salt and a good amount of ground black pepper and combine.
In a separate dish, beat the eggs and milk until smooth.
Take a slice of tomato and coat it with flour mixture shaking off excess. Dip into egg/milk mixture. Coat again with flour mixture and set aside on clean plate. Repeat the process until you have coated all slices of tomatoes.
Lay as many tomato slices that will fit in the pan, evenly in oil and allow to fry 3-4 minutes or until golden brown then flip and repeat on opposite side. Lay finished tomatoes slices on plate lined with a paper towel for draining and sprinkle sparingly with kosher salt. Repeat process until all tomatoes are cooked.
Serve Immediately. Fried Green Tomatoes are best when warm, but can be served at room temperature. |
