6 cups carrots, sliced
1 medium onion, chopped
3 tbsp butter
1 can cream of celery soup
3 cups croutons
1/2 tsp salt
dash of pepper
1/2 cup cubed velveeta

Directions:
Directions:
Par boil carrots until tender. Saute onions in butter and combine with carrots. Heat soup and pour over cheese and carrots. Put croutons on top and bake for 30 minutes at 350.
