1# 13 oz. canned sweet potatoes
¼ c. margarine
Scant ¾ c. sweet potato juice
3 eggs
1 ½ c. sugar
¾ c. evaporated milk
½ tsp. cinnamon
Dash of nutmeg
¾ tsp. vanilla

Directions:
Directions:
Heat potatoes in pan over medium heat until hot (not boiling). Drain juice into a cup and save. In a large bowl, combine softened margarine and potatoes. Add all other ingredients except potato juice and milk. Beat with mixer on medium speed. Add milk and juice and beat until well blended. This is kind of messy, you can cover with waxed paper while beating. Pour into casserole dish (approximately 10” square x 2” deep). Bake 350 oven for 1 hour.

The last five minutes of baking, sprinkle topping on casserole and put under broiler until brown - watch so it doesn’t burn!
Topping: 1 T. flour, 1 T. sugar, ¼ tsp. cinnamon, ¼ tsp. nutmeg, 2 T. softened margarine, ½ c. chopped pecans

This is delicious with Thanksgiving or Christmas dinner - it tastes like a dessert!
