3 c. mashed sweet potatoes 1 tsp. vanilla 1/3 c. melted margarine Topping: 1 c. brown sugar 1/3 c. flour 1 c. coconut 1 c. chopped pecans 1/3 c. melted margarine
Preheat oven to 350. Grease a 1-1/2 qt. casserole dish. Mix sweet potatoes, vanilla, and margarine and place in casserole. Combine topping ingredients and sprinkle over top of sweet potato mixture. Bake covered 20 minutes and uncovered 15 minutes until topping is golden brown.
