1 to 2 pounds chicken (2 large chicken breasts)
1 jar (48 oz.) Great northern beans
1 jar (16 oz.) hot or mild salsa
4-8 oz. Monterey jack cheese
2 tsp. cumin

Directions:
Directions:
Cook chicken and cut into bite size pieces. In 3 quart saucepan, combine chicken with beans, salsa, grated cheese and cumin. Cover and simmer for an hour or two, stirring occasionally and adding water if it becomes too thick. May also use crock pot and simmer several hours.

Ladle into bowls and serve with crisp corn chips. 6 servings.
The amount and kind of cheese and type of salsa makes the flavor hot or mild. The first time perhaps it’s best to start mild.
