1/2 lb. bacon
2 large onions, chopped
4 stalks celery, sliced small
1 red pepper, chopped small
4 T. tomato paste
1/2 tsp. meat glaze (concentrated beef broth)
1 c. navy beans
1/2 c. black beans
4-1/2 c. beef stock
4-1/2 c. water
3 large carrots, diced small
1 T. basil
1 T. oregano
2 tsp. salt
Pepper to taste

Directions:
Rinse beans, put in separate bowls and cover each with water. Let sit overnight, changing water at least once. Drain. Cook bacon until quite done, but not crisp. Remove from pan. Cook onion, celery and pepper in the bacon fat until limp. Remove from heat, stir in tomato paste and meat glaze. Put beans and onion mixture in a large heavy soup pot. Add stock, water, carrots, basil, oregano, salt and pepper. Break bacon into small pieces and add to pot.

Bring to boil, simmer uncovered 5 hours or until beans are soft. Stir occasionally.
