24 cups diced tomatoes
3 green peppers, chopped
9 medium onions, chopped
6 banana peppers, seed removed, cut up and blended

3 cans (12 oz. each) tomato paste
1-1/2 c. vinegar
4 tsp. pepper
4 T. salt
3 T. garlic powder

In a kettle, mix together the tomatoes, green pepper, onion, banana pepper, tomato paste, vinegar, pepper, salt and garlic powder. Simmer for two hours. Ladle hot sauce into hot jars and processing in boiling water bath for 30 minutes or freeze the sauce.

Makes 16 pints.

Banana peppers: Use 3-1/2 tsp. blended banana peppers for mild sauce or 6 tsp. for hotter sauce.

May use jalapeņo peppers instead of banana peppers.
