1 Lb Scallops

2 tbsp Olive Oil

2 Tbsp Compound Butter (see Recipe)

Salt and Pepper to taste

Heat a large skillet over high heat. Get it as hot as you can, this could take 5-10 minutes. Place the scallops on paper towels and cover with more paper towels. Blot to dry and remove any excess water. If the scallops are not dry, they will not sear properly. Season both sides of the scallops with salt and pepper.



Add half the olive oil and butter to the skillet. You do not want the scallops crowded in the pan, so this may have to be done in 2 batches, or in two skillets. Add the scallops and let them sear for 2-3 minutes on each side.



Keys to great Scallops:

Make sure they are DRY!
Make sure the pan is as HOT as possible!
Do not touch them except when turning!

Note: If you do not have compound butter prepared, using regular butter is fine.
