2 Pounds tender green beans (ends taken off)
2 Onions, chopped
1 Yellow and 1 green pepper,cut in slivers the size of the beans
2 Tablespoons olive oil
4-5 slices bacon

For Marinade:
3/4 cup olive oil
1/2 teaspoon salt
1 teaspoon sugar
A few shakes of red pepper and black pepper
1/4 cup tarragon leaves, finely chopped
4 Tablespoons lemon juice
A pinch or so of thyme and oregano

Directions:
Directions:
Steam the beans just until done. Mix the marinade well in a jar or bowl. Saut'e the onions and peppers in oil and mix with the beans. Pour into a shallow baking dish and add the marinade. Let the beans marinate for 6 hours or longer, turning over them seveal times. Fry and crumble bacon place over the top of beans and serve at room temperature.
