1lb chicken thighs (boned and cub) 3 eggs,beaten 1/2 cup and 2tsp cornstarch 5 dried pepper pods 1-1/2tble rice vinegar 2tble rice wine 3tbls sugar 3tbsp soy sauce

Šin large bowl, thoroughly blend the 1/2 cup cornstarch and the eggs,,, add the chicken and toss to coat... if mixture bonds too well. add vegetable oil to separate the pieces... in small bowl prepare sauce mixtures by combining 2tsp cornstarch with the wine vinegar sugar and soy sauce... set aside... heat 1-2 inches of peanut oil in wok to medium-high heat(350-400). fry chicken in small batches, just long enough to cook the chicken through... remove the chicken to absorbent paper towel allow to stand.... leave a tablespoon or two of oil in wok... add the pepper pods to the oil and stirfry briefly... awakening the aroma but not burning them... return chicken to wok and stirfry until pieces are crispy brown... add the sauce mixture to wok tossing until sauce caramelizes (1-2)min... serve immediately along with some steamed broccoli and brown rice..... enjoy
