3 large tomatoes, sliced ¼ - ½ inch thick
½ large cucumber, thinly sliced
½ red onion, thinly sliced
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
2 tablespoons minced fresh basil
1 tablespoon minced fresh parsley
¼ teaspoon salt
½ teaspoon pepper

Directions:
Directions:
Alternately arrange sliced tomatoes, cucumbers and onions in a
9 x 12-inch dish. Combine remaining ingredients, then drizzle
over vegetables. Cover and marinate at room temperature for
1 – 2 hours. (Or if desired, marinate overnight in refrigerator.
Allow to stand at room temperature 1 hour before serving)
