1 1/2 lb ground beef
2/3 cup cracker crumbs
1/3 cup minced onions
1 egg
1 1/2 tsp salt
1/2 tsp ginger
1/4 cup milk
1 tbsp shortening
2 tbsp cornstarch
1/2 cup brown sugar, packed
1 (13.5 oz) can pineapple tidbits
1/3 cup vinegar
2 tbsp soy sauce
1/3 cup chopped green pepper

Mix beef, cracker crumbs, onion, egg, salt, ginger and milk. Shape beef mixture into balls. Melt shortening in a large skillet and brown and cook meat balls. Remove meat balls and keep warm. Pour fat from skillet. In a bowl, add juice from pineapple, vinegar and soy sauce stirring until smooth. Pour mixture into skillet and cook over medium heat until mixture thickens and boils. Boil 1 minute, stirring constantly. Add meatballs back to skillet and add pineapple tidbits and green peppers. Continue to cook and heat through. Serve with rice.
