3 sticks unsalted butter cut into pieces
12 oz. fine quality bittersweet chocolate, chopped
6 large eggs
1 1/2 c. cake flour
1 c. plus 2 T. unsweetened cocoa (not Dutch processed)
3 c. sugar
1/2 tsp salt

Directions:
Directions:
Preheat oven to 350. Butter and flour (or use cocoa) 13" x 9" metal pan. Melt butter and chocolate in double boiler, stirring until smooth. Remove pan and whisk in eggs 1 at a time. Sift flour and cocoa powder together and add sugar and salt. Add to batter.
Bake until top is firm and tester comes out without crumbs adhering - 40-45 minutes. Cool for 2 hours.
