1 bag frozen peas
2 c vegetable stock
1 clove garlic
2 tbsp Olive Oil
1/3 c grated parmesan cheese
½ tsp salt
½ tsp pepper
¼ tsp crushed red pepper (optional)

Directions:
Directions:
In a medium saucepan over medium heat, add the stock and peas. Heat until thoroughly thawed and warmed through, about 5-10 minutes. Drain the peas, but reserve about 1 cup of the stock.

In a food processor, add the peas, garlic, olive oil, salt, pepper and crushed red pepper. Add about ½ cup of the stock. Blend until smooth. Add more stock until desired consistency is achieved. Add parmesan cheese and mix well. This may be served warm or chilled. Serve on crostini, with vegetables, on crackers, or even as a spread on your favorite sandwich or wrap!
