"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

In a medium saucepan over medium heat, add the stock and peas. Heat until thoroughly thawed and warmed through, about 5-10 minutes. Drain the peas, but reserve about 1 cup of the stock.

In a food processor, add the peas, garlic, olive oil, salt, pepper and crushed red pepper. Add about cup of the stock. Blend until smooth. Add more stock until desired consistency is achieved. Add parmesan cheese and mix well. This may be served warm or chilled. Serve on crostini, with vegetables, on crackers, or even as a spread on your favorite sandwich or wrap!
