1-3/4 C sifted whole wheat pastry flour
1/4 t baking powder
1 t baking soda
1/2 t salt
1/2 t cinnamon
1/4 t cloves
Pinch of ginger
1/3 C butter
2 eggs
1-1/3 C packed light brown sugar
1/3 C milk
1 C pumpkin puree
1/2 C chopped dried cranberries or dates

Directions:
Directions:
1. Sift together all dry ingredients.
2. Preheat oven to 350 degrees.
3. Lightly grease and flour 9x5 loaf pan.
4. Beat sugar until white.
5. Add the sugar and beat until fluffy, about 5 minutes.
6. Add eggs, one at a time. If mixture looks cracked, add 1 or 2 tablespoons of the dry ingredients until smooth.
7. Stir in pumpkin puree.
8. Add dry ingredients in 2 parts, alternating with the milk.
9. Add the cranberries or dates,
10. Pour batter into prepared pan. Bake for one hour.
