2 cups ground chocolate wafers
4 oz. semi-sweet chocolate
5 tbs. unsalted butter- melted
1 1/4 cups of chilled whipping cream
1/4 c. white cream de cocoa
1 1/4 tsp. unflavored gelatin
9 0z. imported white chocolate
1/4 c. brandy
1/2 c. sour cream

preheat oven to 350º. Place in a blender the chocolate wafers and half of the semi- sweet chocolate and produce fine crumbs. Melt butter and add to crumbs, mix well. Place mixture in 9" pie and press crumbs to sides and the bottom of the pan. Bake for ten minutes. Combine 1/4 cup of cream and 1/4 cup of cream de cocoa in heavy sauce pan. sprinkle gelatin over the top and whisk to blend. Let stand for 10 minutes. Place gelatin mixture over low heat and stir until gelatin dissolves. Add white chocolate and stir until melted and smooth. Add brandy. Transfer mixture to larger bowl and cool, stirring occasionally for 15 minutes. Beat the remaining cream to form stiff peaks, then blend carefully. Pour or spoon filling into crust. Refrigerate at least 4 hour or overnight.
