"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
Crust: 1 c. flour ¼ c. brown sugar ½ c. walnuts ½ c. margarine
Filling: 2 egg whites 3/4 c. sugar 2 c. sliced fresh or frozen berries 2 T. lemon juice 1 c. cool whip
Cut in and spread crust mixture in 9x13 pan and bake 350 for 20 minutes stirring occasionally. Remove from oven, cool slightly and reserve ½ c. for top – press rest in same pan.
In large bowl combine all the filling ingredients, except for the cool whip. Beat at low speed, about 2 minutes, then high speed til stiff peaks form (about 10-15 minutes). Fold in cool whip. Spoon over crust; top with reserved crumbs. Freeze 6 hours or overnight. Cut in squares and garnish with fresh berries.
