3 egg whites, room temp.
1 c. sugar
1 t. vanilla
15 single saltines, finely crushed
1 c. nuts, finely crushed

Filling:
1 c. butter
2 c. xx sugar
4 (1 oz. each) sq. unsweetened chocolate melted
4 eggs
1 t. peppermint extract
2 t. vanilla

Directions:
Cupcake papers in 24 tins. Beat whites til stiff. Gradually add sugar and vanilla while continuing to beat. Fold crackers and nuts. Put 1T in paper and bake 20 minutes at 350. Blend butter and sugar. Beat 5 minutes. Add chocolate. Beat 5 minutes more. Add eggs one at a time, beating 5 minutes after each egg. Add extracts - 5 minutes more. This mixture goes onto the bottom. Freeze. Real rich and creamy!
