Apple Pie Recipe

3 12/ c unbleached flour
1/3 c sugar
1/2 c margarine
1 tsp grated lemon rind
1 whole egg
2 egg yolks
1/3 c cold milk

FIlling:
6 big Roman Beauty apples, peeled and sliced into wedges
1 c sugar
1/2 c seedless raisins
1/2 c water
1 tsp cinnamon
1 tbsp cornstarch

Pastry:
Mix the flour, sugar, margarine, and lemon rind until it turns into a crumbly mixture. In small container mix the egg, egg yolks and milk. Add to flour mixture and work until it forms a smooth ball. Place in refrigerator while you prepare the filling.

FIlling:
In a big pan place apples, sugar and water and bring to boil over medium heat stirring slowly. In a small cup mix the cornstarch with 1/4 cup water until smooth. Add this mix to the apple mixture stirring slowly until it thickens. Do not over cook. Turn off heat and add raisins and cinnamon.

Remove pastry dough from fridge and divide into 2 balls. On a lightly floured surface roll out dough to form a circle 2" larger all around than an inverted pie pan. Cut the rough edges, fold the dough in half and carefully lay it in the pie pan. Press with your fingers to remove the air pockets. Pour in the filling. With remaining dough ball, you can either roll a cover for the pie and prick top with fork for venting, or you can cut long strips to make a woven basket top for your pie. Either way, brush the top of the shell with one egg yolk mixed 1 tbsp of water.

Bake at 375º for 30 to 35 minutes.
