1 lb. ground beef, browned
1 med. onion, chopped
1 c. carrots, shredded
1 c. celery, diced
1 tsp. dried basil
1 tsp. dried parsley flakes
4 Tbsp. butter, divided
3 c. chicken broth
3 c. potatoes, peeled & diced
1/4 c. flour
1 1/2 c. milk
3/4 tsp. salt
1/4-1/2 tsp. pepper
8 oz. American Cheese, cubed or shredded
1/2 c. sour cream

In 3 quart saucepan, brown beef - drain and set aside. In same pan, saute onion, carrots, celery, basil & parsley in 1 Tbsp. butter until tender (~10 min.). Add broth, potatoes & ground beef - bring to boil. Reduce heat, cover & summer 10-12 min. Meanwhile, in small skillet, melt remaining butter. Add flour & cook 3-5 minutes until bubbly. Add to soup; bring to a boil. Cook & stir 2 min. - reduce heat to low. Add cheese, milk, salt & pepper - stir in well. Remove from heat - blend in sour cream and enjoy!
