"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Joe's Portabella Meal-In-One, by Joe, is from Grandma Merc's Family Cookbook,

2 large portabella mushrooms (cleaned). 1 8oz. box frozen cream of spinach. 1/4 lb. honey roast turkey. garlic powder. 4 slices of monterey jack or provolone cheese.
Remove stem of mushrooms and clean out inside with the tip of a spoon. Cook spinach in microwave for recommended time. Put a layer of spinach in each mushroom. Add some garlic powder to spinach. Next layer is two slices of turkey for each mushroom followed by another layer of spinach. Top with two slices of provolone or monterey jack on each mushroom.. Bake in 350º oven for 30 minutes.
Before removing mushrooms you can put under broiler for 2 - 3 minutes to make cheese brown on top.
