8 cups peeled, chopped tomatoes
2 cups roasted, seeded & chopped long green chili peppers.
1 cup roasted, seeded & chopped jalapeņo peppers
3/4 cup chopped onions
11/2 teaspoon salt
2 garlic cloves, minced
11/2 cup cider vinegar
2 to 3 tablespoons sugar

Combine all ingredients into large pan. Bring mixture to a boil; reduce heat and simmer about 20 minutes. Pour into hot jars leaving 1/2 inch head space. Put lids on jars and process in boiling water bath for 30 minutes (sea level) Add 2 minutes to process time for each 1,000 feet altitude.

Clean sterile jars and new lids is recommended.
I fill and soak my jars in boiling water for about 20 minutes before filling with salsa. I also wipe down the rim of the jar with a damp cloth before placing the lid on the filled jar.
