2 eggs
1/2 c. sugar
1/2 c. brown sugar
1 c. grated zucchini
1 t. vanilla
1/2 c. cooking oil
1 1/2 c. flour
1/2 t. baking soda
1/4 t. baking powder
1/2 t. salt
1/4 cinnamon
1/4 c chopped nuts

Directions:
Directions:
Beat eggs, add oil, sugars, grated zucchini and vanilla. Cream together. Add sifted, dry ingredients. Mix thoroughly, add nuts. Pour into 2 greased bread pans. Bake 1 hour in 325º oven, Let cool in pan for 10 min. Turn out onto a baking rack to cool completely.

This is the first recipe that I used for zucchini bread. It is good, however the other recipe uses 2 c. zucchini and I'm always looking for ways to use more zucchini.
