2 lbs cream cheese, room temperature
1 c. whipping cream
4-5 eggs
1 c. milk
2 c. sugar
3 Tbs. flour
1 t. cornstarch
pinch of salt
2 t. vanilla
2 Tbs. melted butter
any good graham cracker pie crust recipes

Directions:

Mix together with hand mixer the softened cheese with all of the dry ingredients which have first been mixed together. Add eggs, one at a time, blending after each one. Add all other ingredients except the cream and butter. Fold these last two into the mixture with spoon. Pour into springform pan which has been lined with graham cracker crust. Bake in very hot oven (500º) for five minutes or until edge of crust is golden brown. Reduce heat to 250º to 275º and bake 1 hour and 15 minutes (may take a little longer depending on your oven). Cool for several hours before removal from pan.

This is the cheesecake that I always make for dad's birthday. I don't know if my pan is smaller than the recipe calls for or what, but I usually have to bake it about 2 hours until the center doesn't jiggle when the pan is moved a little. You have to use a springform pan for this recipe.
