1/2 cup cider vinegar
3/8 cup white sugar
1/8 cup olive oil

Vegetables:

4 cloves garlic, minced
2 or 3 peppers, chopped (red, green, yellow)
1 medium red onion
2 cans shoe peg corn, drained
1 can black beans, rinsed

Directions:
Directions:
Boil vinegar,sugar and oil. Allow to cool. In a separate bowl, combine garlic,peppers,onion,corn and black beans. Mix with cooled liquid and refrigerate for 1 hour before serving.
