4 fresh tuna filets, 8oz. each

Spice Mixture:
½ cup sesame seeds (I mix white and black sesame seeds)
1 Tbsp ground ginger
1 Tbsp ground cumin
1 Tbsp grated lime zest
1 Tbsp cracked black pepper
1 tsp kosher or table salt

Directions:
Directions:
Combine all spices and coat Tuna on all sides, pressing mixture into Tuna to secure. Sear Tuna in hot pan (with a small amount of olive oil) on both sides for 1 minute each. Tuna should be served rare. (or medium rare at the most – otherwise it is too dry) Can be served with a favorite mango salsa or tartar sauce – or it’s also delicious plain!
