2 c. All Purpose flour.
non-stick cooking spray.
1/2 tsp. salt.
1 tbl. baking powder.
1c. milk.
2 large eggs.
2/3c. sugar.
1c. Creamy Peanut Butter.
1/3c. Vegetable Oil.
1/2c. jam or preserves (any flavor).

Directions:
Directions:
Heat oven to 375.
Spray muffin pan with non-stick spray.
Stir together flour,salt and baking powder in a bowl.
Add milk, egg, sugar, peanut butter and oil to bowl.
Combine ingredients on low speed with electric mixer just until moistened. Do not over beat.
Fill muffin cups with half of the batter.
Then put 2 tsp. of jam or preserves in the center of each muffin. Put remaining batter on top of each muffin cup.
Sprinkle tops with sugar.
Bake for 18-20 minutes.
